Sancoche Soup

Ingredients

2 Cups beef, cubed

1 Can Island Pride peas and carrots

1/2 Can Island Pride whole kernel corn

1 Lb sweet potato, cubed

1 Lb potato, cubed

1 Lb dasheen, cubed

1 Lb pumpkin, cubed

3 Pimento peppers, chopped

5 Leaves chadon beni, chopped

5 Garlic cloves, crushed and chopped

1 Small onion, diced

3 Tbsps Island Pride soybean oil

1/2 Hot pepper (optional)

1 Sachet Island Pride coconut milk powder

Salt & pepper to taste

Step 1

Bring beef to a boil for approx. 30-35 minutes.

Step 2

In a large pot heat soybean oil and saute the onion, garlic and pimento peppers.

Step 3

Add in the beef along with sweet potato, potato, dasheen, and pumpkin.

Step 4

When provisions are soft then add in coconut milk and season with salt and pepper to taste.

Step 5

Lastly, add in peas and carrots, corn, and chadon beni.

Step 6

Garnish with hot pepper and serve warm.
