Island Pride Mackerel Accra


1 can Island Pride Mackerel in oil, drained
2 eggs
¼ cup flour
¼ cup Island Pride Soybean Oil
1 medium onion, diced
1 ½ tsp ginger, grated
2 tsp garlic, grated
2 pimento peppers, chopped
1 tbsp lime juice
Tartar sauce (optional)
Salt and pepper (to taste)

Step 1

Mix all ingredients, until well combined. Then, form mixture into disks, using more flour as needed.

Step 2

Heat oil in a saucepan on high heat. Fry patties on either side until golden brown.

Step 3

Allow accra to cool on paper towels to drain excess oil.

Step 4

Serve with a tartar dipping sauce.
