Mango Coconut Pudding Parfait

Ingredients

1 Satchet Island Pride Coconut milk powder

1/3 cup mango puree

1/4 cup custard powder

1/2 can Island Pride condensed milk

2 heaping tbsps powdered milk

1 cup water

1 cinnamon stick

For Assembly:

2 mangoes, diced

1/2 cup granola

Whipped cream, for topping

Step 1

Mix powdered milk and custard powder in one half cup of cold water until well combined.

Step 2

In a separate bowl, mix cocount milk powder with 1/2 cup water and stir well.

Step 3

In a saucepan, add milk mixture until it comes to a boil. When liquid starts to bubble add coconut milk followed by the mango puree.

Step 4

Then add condensed milk. and cinnamon stick to saucepan. On a low heat cook until mixture is thickened. Add pinch of salt to taste.

Step 5

To assemble, add granola, mango custard, and chopped mango. Repeat until glass is filled to top.

Step 6

Garnish with whipped cream and more granola.
