One Pot Mackerel and Rice


1 Tbsp Island Pride Soybean Oil
2 Cans Island Pride Mackerel in Tomato Sauce
1 Tbsp Green Seasoning or Chadon Beni, chopped
2 Cups Long Grain Rice, cooked
1 Cup Bell Pepper, sliced
4 Spring Onions, trimmed and sliced
Salt and Freshly Ground Black Pepper

Step 1

Heat soybean oil on medium-heat in a small saucepan and add mackerel in tomato sauce. Bring to a simmer and add in green seasoning. Immediately take it off the heat and set aside.

Step 2

Add the sliced peppers and spring onions to the cooked rice and season with a little salt and freshly ground black pepper. Share between two plates and top with the mackerel in tomato sauce. Serve at once.
