Sweet and Sour Mackerel Dish


For the Mackerel:

  • 2 cans Island Pride Mackerel, in brine (drained)
  • 2 cups Island Pride Soybean Oil
  • 3 eggs
  • 1 tbsp green seasoning
  • 2 1/2 cups breadcrumbs
  • salt and pepper to taste

For the Stir Fry:

  • 3 tbsps Island Pride Soybean Oil
  • 1 cup broccoli, cut into pieces
  • 1 cup carrots, chopped
  • 1 cup bell peppers, chopped
  • 1 cup snow peas
  • 1 cup bean sprouts
  • 1 cup white onions, chopped
  • 1 bottle Chung Chun (CC) Brand Sweet & Sour Sauce
  • 2 tsps garlic, grated
  • 2 tsps ginger, grated
  • 3 tbsps Chung Chun (CC) Brand Oyster Sauce
  • 1 can Narcissus Po-Ku Mushrooms
  • 1 tbsp sesame oil

Step 1

To make egg wash; whisk eggs, green seasoning, and salt and pepper to taste. In a separate bowl, add breadcrumbs and season with salt and black pepper.

Step 2

Preheat soybean oil in a deep saucepan. Gently coat mackerel pieces in egg wash, and then breadcrumbs. And repeat this process once more.

Step 3

Then place mackerel into frying oil and remove when golden brown.

Step 4

In a separate saucepan, heat soybean oil and saute garlic and ginger until fragrant. Then add in oyster sauce.

Step 5

Add remaining vegetables to the pan and cook until tender. Then, coat vegetables in sweet and sour sauce and add in mackerel.

Step 6

Lastly, add in sesame oil and mix to combine. Serve over rice.
