Tuna Jacket Potatoes


6-7 Large Baking Potatoes
2 Cans of Island Pride Tuna in Brine (drained)
1/2 Can of Island Pride Whole Kernel Corn (drained)
1/2 Can of Island Pride Red Kidney Beans (drained)
1/2 Cup Red Bell Pepper, chopped
3 Spring Onions, trimmed and sliced
3 Tbsp Mayonnaise
Juice of Half a Lemon
Salt and Pepper to Taste

Step 1

With a fork pierce skin of each potato, place them in the oven preheated to 200°C (392°F) and bake for about an hour or longer, until very soft inside (check with the fork).

Step 2

Combine all ingredients for the filling into a mixing bowl and set aside.

Step 3

Once potatoes are ready cross cut them while still hot and top them with the filling.
